This document (from page 13) shows the lap times set for each car during qualifying practice, although I appreciate that this isn't exactly what you're looking for. Perhaps you could try contacting the ACO (Automobile Club de l'Ouest - the club who organise the race) or one of the competing teams to see if they would provide you with either a Lap Analysis or Sector Analysis document.

Thank you. Yes it would be pretty big, and for my purpose it would be preferable to be more like a database or plain .txt file.

So really, I’m not strictly set on this "every lap time" thing, but that was the first thing that came to mind. If you have any other sources of similar content, keep 'em coming.
