I'm not sure you CAN just choose one- everytime I try I come up with a different answer.....
Your list is pretty similar to mine- 250F, Eagle, Lotus 25 and 72- (72 has to be in JPS colours though- if only because it's one of the first F1 cars I remember....)
A few I'd definitely add to the list are the Lotus 49 (choose between Team Lotus green or Rob Walker blue- definitely NOT Gold Leaf though....), the original Jordan 191 or the streamlined Mercedes W196 from the 50's
