I'm no expert and haven't done the more obscure, off the beaten path visits. What I have seen that impressed me though was Angers. Nice town square with some really good restaurants, a small but well preserved old town, and a beautiful, fortified chateau. The train ride from Le Mans to Angers is pretty handy.
I'm sure everyone has already done this, but the cathedral in Chartres is one of the most amazing things I've ever seen.
